Menu Mondays







Oh yeah I do provide food for this ever-expanding family. Lately though, I haven't been in a cooking mood. I blame my travelling hubby and Butterbean for making every meal I can think of make me gag. That has all passed and the weather is really cooling off so I am cooking again. This week is:

Monday: porcupine meatballs, corn, broccoli
Tuesday: chicken and wild rice casserole
Wednesday: lasagna (at church)
Thursday: sausage ring and fruit
Friday: taco soup and quesadillas

I am already hungry. Wait that is Butterbean's fault again. And if anybody wants to join in you can go here to get started.

    Porcupine Meatballs

    Ingredients:

    1 pound ground beef
    1 egg
    1 cup cooked white rice
    onion salt and pepper to taste
    1 can of beef gravy
    Directions:
    Cook rice according to package directions. You can make more than one cup if you would like the rice as a side dish.
    Mix the ground beef with the egg in a mixing bowl. Once the rice is cool enough, mix it in as well. Add in the onion salt and pepper to taste.

    Shape the mixture into 2 inch meatballs and place in a baking/casserole dish. I usually get about 9 meatballs.

    Pour gravy over top and bake covered at 350 degrees for 30 minutes. Check the inside of one to make sure it is done.
